It is squash season, and we simmer local organic butternut squash, curry powder and other secret ingredients. Coconut milk is the main base ingredient, so you can eat no meat and still have plenty of calories for a full day of hiking and adventure. Slightly spicy with the offset of organic medjool dates to balance the flavors. Crunchy polenta croutons give this soup a nice texture.
This soup will serve two as a first course or fill you up if you are traveling solo.

Just add hot water directly to the bag. Our Mylar bags are certified BPA free, but some people prefer to transfer contents to another bowl, add the hot water and put a tight covering or 3-7 minutes depending on which meal. Stir occasionally, and then DIG IN!
